This month’s Whoopie pie is far from average. What's a whoopie pie? It's two soft chewy cake like cookies with a sweet creamy filling creating the perfect dessert sandwich. This time we decided to add a lil something extra!
Picture the most delicious and moist coconut cookie filled with coconut flakes in every bite; it’s almost as if you’re biting into a macaroon. On top of that you have buttercream icing bursting with a zesty lemon flavor and if you thought that was it, there is a surprise in the middle, a sweet homemade pineapple jam. I can tell you right now you won’t want this delicious cookie to miss you. Each bite wants you craving more.
